Vinification: We select our bunches following a careful thinning in the vineyard. After destemming, the grapes are introduced by gravity into the vats. Our philosophy is to have the fermentation carried out by natural yeasts without controlling the temperature of the tank.
Harvest: Second week of September, only handmade by our staff. The harvest is delicately done in boxes. Extensive nose with notes of cherry, red fruits and tertiary aromas such as undergrowth, mushrooms and spices. In the mouth, the tannins are soft and gentle. The freshness is pleasant and lively. The juicy and captivating fruit gives the wine harmony and an elegant sincerity.
